Yum



Why, yes.  That's Egg's Benedict for dinner.  Made with cibatta in lieu of English Muffins and some corned beef standing-in for the ham.

Who doesn't love a dish made of egg sitting on top of a salted, smoked pork product (normally), smothered in a sauce made out of yet more egg and way too much butter?  Definitely a "sometimes food," if there ever was one...but oh-so-tasty.

And the wife was happy.
